History
Let's take a quick trip back to eastern Canada, right on the border with the United States, where the lobster roll was born more than 90 years ago. Many researchers agree on the first place of preparation of this sandwich and it is Connecticut. However, it did not take long for him to become popular and a true icon in Canada.
Producers, for their part, have moved towards lobster farming, which is however less profitable given the fairly long development period. From then on, the lobster roll is no longer the inexpensive snack it was in its early days. In fact, it was cheaper than a simple hot dog. Now it is much more expensive in Canada.
Ingredients
- Three medium Canadian lobsters, whole, frozen and cooked or two large lobsters
- Two hot dog buns
- A jar of cocktail sauce
- Radish
- A bunch of chives
- A lemon
- Mesclun
- An onion
- Olive oil
- Tabasco
- Salt and pepper
- Preparation
Take your lobster out of its packaging and let the ice melt by placing it in lukewarm water for a few minutes. Immerse the crustacean in a container containing cold water and place everything in the refrigerator for two hours. Drain the crustacean, keeping its head down. Break the lobster shell in two going lengthwise. Also break the clamps starting at the joints. Break them using a lobster claw breaker. Collect the flesh of the crustacean, slice it and keep aside. Chop the onion and slice the radishes and celery using a mandolin. Also slice the mesclun.
Then cut your loaves in half and spread the inside with olive oil. Heat the pan and toast the buns on the outside. Place the mixed greens salad on the bottom of the buns to create a carpet of greenery.
In the salad bowl, place the onions, four tablespoons of cocktail sauce, the juice of half a lemon and the radishes. Add the shellfish flesh. Pour in the tabasco, then salt and pepper. Mix until smooth. The preparation coats the lobster meat without crushing it. Garnish your breads with this mixture and sprinkle with chives. Enjoy.
