Canadian specialty Donair recipe
History
The word Donair was inspired by Döner Kebab. It's a typically Canadian variation of the gyroscopic sandwich. The first Donair sandwiches were created in the Halifax region of Canada.
Instead of lamb, the meat is a mixture of ground beef and breadcrumbs with different spices, the sauce with sweet garlic.
This meat was used for other foods. The sauce used is the normal sauce instead of the conventional red sauce.
While it's true that you can find donair all over Canada, the best versions are found in and around Halifax. The sauce is less flavorful and the meat less tender for the most part. Several Donair restaurants in Halifax cooked meat according to the method required by legislation.
Ingredients :
To make the sauce:
150 g of white sugar
50 ml of vinegar
50 cl of very cold milk
¼ tsp. to c. garlic
To prepare the meat:
2 tbsp. tsp pepper
2 tbsp. tsp oregano
2 tbsp. tsp onion
½ tsp. tsp salt
1 kg of ground beef
100 g of breadcrumbs
1.5 tbsp. tsp cayenne pepper
1 C. teaspoon of garlic
Utensils to use:
1 pastry robot
1 wooden spoon
1 aluminum
1 lid
1 blender
1 grater
Preparation :
You must start by grinding the already ground beef in the food processor. This allows you to have finely chopped meat. You can then add all the ingredients and mix. Then shape 2 small meat loaves to cook at 160°C. If you see that the top of the meatloaf is cooking too quickly, cover it with aluminum foil.
When it's done, you can cool the meatloaves, then slice them as thin as possible. You can also cut them while they are still hot. Save the fat from meatloaf after cooking.
As for the sauce, blend the first 3 ingredients together. Add the vinegar little by little, then mix everything until you obtain the desired texture. Leave to rest in the refrigerator for at least 1/2 hour before serving.
Let's move on to assembling the donair. Simply heat the meat in a non-stick pan. Take the fat set aside, or just a little oil. Soak each side of a pita bread with water, then heat it in a non-stick pan. Place the meat in the pita, add the sauce, onions, tomatoes and grated cheese.
