Maple Syrup Ice Cream Recipe
Maple syrup is one of the best-known and most appreciated Canadian products. It goes very well in sweet preparations: its nutty and caramel taste is perfect in ice cream. Ingredients for approximately 1L of ice cream
- 50 cl of whole liquid cream at 35% of fat
- 25 cl of milk of animal or vegetable origin, according to your preferences
- 25 cl of Maple syrup
- 60 g brown sugar
- 1.5 tablespoons cornstarch
- 5 egg yolks
To make this Canadian recipe, it will take approximately 40 minutes of preparation. Also allow 10 minutes for cooking. Finally, note that the cream will take at least 5 hours to set.
Recipe steps
Mix the maple syrup, starch and brown sugar in a saucepan off the heat.
Then incorporate the egg yolks, before adding the cream and milk.
Once the mixture is homogeneous, heat it over low heat.
Use a wooden spatula to stir constantly, so that it doesn't stick to the bottom or sides of the pan.
You should arrive at a first broth, with a visible thickening of the preparation. Do a spoon test.
Cover it with sauce and then trace a furrow with the tip of your finger on its back. The furrow must remain well marked.
Reaching this consistency takes around ten minutes of cooking.
Then pour the mixture into a large glass container, place plastic wrap directly on its surface and leave to cool.
Leave to cool in the refrigerator for at least 4 hours before passing the cream through a sieve.
Then pour into an ice cream maker and follow the manufacturer's instructions. Thirty to 40 minutes of stirring should be enough to set.
Then transfer the cream into an airtight container and place it in the freezer for at least an hour before serving.
This maple syrup ice cream can be served alone or as an accompaniment to pancakes, waffles or a slice of light cake.
