History
Beavertail is a pastry that can be found in different cities in Canada and also in several countries around the world. The story goes that the bishop of Quebec considered the beaver to be a fish in the 17th century. This is explained by the fact that the animal lives in water and its tail is made up of scales. From then on, the inhabitants of New France consumed beaver flesh even during Lent, while this consumption remained prohibited among Catholics.
Let’s return to the treat we know as “beaver tail”. It comes from a German recipe and more precisely from Grant Hooker. She would start by frying the dough before topping it with jam, butter, cinnamon sugar or honey. The Hooker family even has a quick recipe for preparing beaver tail. Grant and Pam's daughter thinks the pastry looks surprisingly like a beaver's tail and that's how it got its name.
Ingredients
For the dough:
- 125 ml of lukewarm water
- 60 ml of sugar
- 2.5 ml yeast
- 16 g of yeast
- 75 ml of vegetable oil
- 01 egg
- 5 ml of salt
- 750 ml all-purpose flour
For garnish :
- 125 ml of sugar
- 5 ml ground cinnamon
Preparation
Start now by mixing the cinnamon and sugar. In a large bowl, pour the lukewarm water and add the cinnamon mixture and yeast. Let sit for five minutes. In a cup, mix the salt, egg and oil. Then pour this mixture into the first preparation. Add half of the flour to everything and stir for five minutes as well. Add flour again until the dough stops sticking to the bowl.
Place the dough that you have oiled beforehand and cover everything with plastic wrap. Wait for the dough to double in volume. Then roll out this dough in the shape of a beaver tail while making three incisions in the hollow. Cook in 350°F oil. Fry on each side to get nice golden beaver tails.
Then move on to the filling by mixing the ingredients provided for this purpose. Roll your beaver tails in the cinnamon and sugar mixture.
