History
Donut holes or timbits are balls of dough sold in major North American restaurant chains such as Tim Hortons. Contrary to popular belief, timbits are not the product of a donut with a hole in the center. They are made from molded balls. These will be fried in hydrogenated vegetable oil. In 1976, this candy was launched on the market by Tim Hortons and its restaurant chain. Today, it comes in different varieties. The most popular varieties are filled with jam, glazed with honey or topped with chocolate. There are other specialty channels in the United States and Canada. The latter have launched similar products. They are known as "Munchkins". Acadians and French-speaking Quebecers use the term “trou de beigne” while English Canadians prefer to speak of “timbits”.
Ingredients :
- 8 cups frying oil (peanut or canola)
- 500ml flour
- 10ml baking powder
- 1.25ml salt
- 180ml sugar
- 45ml melted butter
- 2 eggs
- 180ml milk 2 %
- 60 ml plain Greek yogurt 0 %
- 5ml vanilla
Preparation
Mix cocoa and flour in a bowl. Add the salt and the baking powder. In another container, whip the sugar and melted butter using an electric beater. Add vanilla, eggs and yogurt. Then whisk until you get a smooth paste. Using the mixer, you will gradually add the other dry ingredients. Take care to whisk everything on low speed. Cover and keep refrigerated for two hours.
Heat the oil in a saucepan or deep fryer until the temperature reaches 150°C. Watch the cooking, because the oil should not overheat. Shape your balls using a tablespoon of dough for each. Fry your balls for 2 to 3 minutes in oil. They should be cooked and well puffed. You can then drain them on paper. Mix the ingredients for the frosting in a container and soak the balls. Let set.

You can fill the timbits with a delicious chocolate ganache, pastry cream or strawberry jam. You can serve this delicious Canadian snack during family gatherings or even in the office when having coffee with your co-workers.
