Grilled chicken with maple syrup
Ingredients for 6 people
- 6 boneless skinless chicken breasts
- 100ml chicken stock
- 100ml of Maple syrup
- 1 tablespoon of thyme, rosemary or Provencal herbs
- 4 garlic cloves
- 2 tablespoons cider vinegar or lemon juice
- 2 tablespoons olive oil
- 2 tablespoons old-fashioned mustard or soy sauce
- Salt and pepper seasoning
Preparation
Allow 10 minutes for preparation and 12 minutes for cooking per chicken breast. Allow 2 hours to overnight marinating for the meat.
- Start by peeling the garlic cloves before finely chopping or crushing them.
- In an airtight Zip-loc type bag, combine maple syrup, herbs, crushed garlic, cider vinegar (or lemon juice), olive oil and old-fashioned mustard or soy sauce).
- Season with salt and pepper before sealing the bag.
- Stir it vigorously in order to have a homogeneous mixture.
- Then open the bag and taste.
- Adjust seasoning if necessary.
- Then place the chicken pieces inside.
- Close the bag, squeezing as much air out of the front bag as possible.
- Then keep the bag tightly closed in the refrigerator for 2 hours minimum.
- We advise you to marinate the chicken overnight in the marinade so that it does not dry out during cooking.
- The next day, take the bag out a few hours before cooking your chicken.
- Remove the pieces, taking care to remove as much marinade as possible.
- Pour the marinade into a saucepan. Heat over low heat until reduced by half.
- This should take less than 5 minutes, but be sure to stir the sauce regularly.
- Keep a third of the sauce thus obtained for cooking the chicken on the grill and the remaining 2/3 for table service.
- Cook the chicken breasts on the barbecue, about 5 to 6 minutes on each side (or until they start to grill).
- Serve the whites and the sauce while still hot.
Accompaniments
This sweet and savory dish goes well with many accompaniments. To be a hit with the kids, serve this grill with mashed potatoes or fries. For adults, you can provide a nice salad. Prepare jacket potatoes for a heartier accompaniment. Use large potatoes so that one is enough for one person. For a fresh side, you can plan a yogurt, herb and garlic sauce for these potatoes.
