Maple syrup is a sweet product originating in Canada. If it is delicious on pancakes or crepes, what about its nutritional values and its components? It contains no fiber, protein or fat, but is high in carbohydrates and calories. We give you more information on the qualities of this Canadian product.
What is maple syrup?
As its name suggests, it is a syrup made from maple sap. The latter is collected at a particular time of the year by tapping the trees. The sap is harvested and then transported to the processing area. It is scalded at 104°C to trigger evaporation and transform it into syrup. During this process, the liquid gains its distinctive nutty color and aroma. To produce one liter, you need about forty liters of maple sap.
Maple syrup can be blond, amber or dark. What differentiates them is the time of the season when the sap is harvested. Dark maple syrup, for example, comes from harvesting well into the season. Maples used for syrup production are found primarily in eastern Canada and the northern United States.
To taste, maple syrup has hints of caramel, nuts and vanilla. It is sweet, but in a complex way. It is believed that it was the native peoples of North America who discovered that maple sap could be turned into syrup.
The benefits of maple syrup
We have studied the intake of 30 ml of maple syrup. They contain 110 calories and 27 g of sugar. Maple syrup sugars are healthier than refined sugars which are very quickly metabolized by the liver, causing a spike in blood sugar, followed by a rapid drop and rise in insulin levels. Eventually, this can cause diabetes problems. As it is still a sugar, its consumption must be controlled.
On the other hand, there are no fats, cholesterol, sodium or proteins. The vitamin intake of maple syrup is rather low, unlike the minerals it contains. Of these 30 ml, there are approximately 30 mg of calcium, which corresponds to 2% Recommended Daily Allowance (RDA). It is the mineral present in the greatest quantity in the body. It is mainly known for its role in good bone health. You should know that it is also used for many other functions of the body. Examples include energy metabolism or cellular exchanges.
In one serving there is zinc and about 100 mg of potassium, or 2% of RDAs. This last trace element is essential for the activation of nerve and muscle cells. Niacin (0.1 mg), magnesium (10 mg) and iron (0.2 mg) are present in quantities too small in a serving to impact RDAs. These 30 ml contain 8% copper RDAs, and 35% of those in manganese (0.82 mg).
Benefits of maple syrup

It would seem that the moderate consumption of maple syrup would have positive effects on heart health. This would be due to the zinc it contains. The latter protects the endothelial cells of blood vessels from oxidized lipids and excessive cholesterol. A lack of zinc promotes the formation of lesions on the lining of blood vessels, which can greatly affect the normal functioning of the heart.
A deficiency in minerals such as zinc and manganese can lead to a drop in the number of white blood cells and affect the immune system. Maple syrup contains these two trace elements. It would also be a better alternative for sweetening than the refined sugar usually sold commercially. It will be more suitable for certain types of diabetics, but since it is still a sugar, it should be consumed in moderation.
