In 1978, the brand BeaverTails Canada Inc. Claims the formalization of its creation and since then, this chain of pastries has continued to produce the famous "beaver tail". Currently, BeaverTails is no longer limited to Canada's borders to market this fried pastry. Indeed, its reputation extends to several countries where the chain is established there: France, United States, Japan, United Arab Emirates and South Korea.
You should know that Queue de Castor's first store is opening its doors in Ottawa's ByWard Market. Its construction is carried out by Grant Hooker accompanied by Pam Hooker who inherited the traditional family recipe. It was in 1988 that the store began to gain fame and other establishments were born outside of Ottawa. Kiosks are then present in Montreal in the La Ronde amusement park and a few years later on the Rideau Canal. Gradually, the company experienced growing success.
Some recipe ideas for preparing a beaver tail

You need :
500g flour
5g instant bread yeast
½ cup hot milk
1 egg a pinch of salt
20ml maple sugar
35ml canola oil

- The preparation
Take a large bowl to mix the yeast and milk. Care must be taken to obtain a homogeneous result. Then add the maple sugar, salt and oil. In another container, you can mix the flour and the egg before adding it to the bowl that contains the milk. Stir the two preparations until the flour is fully incorporated and a perfectly homogeneous preparation is obtained.
To knead the dough, it is essential to prepare a clean and floured surface. After a few minutes you will have a firm dough, you can place it in a bowl and cover it with a damp cloth then place it next to a heat source. After resting for at least 1 hour (after which the dough will have doubled in size), you can knead it again for 2 minutes. Once that's done, let your dough rest for another hour or so.
You can then divide the dough into several parts and knead each one on a floured surface to obtain an oval shape 15 cm long like that of a beaver tail. The thickness should be around 5mm.
For cooking, it is essential to have a fryer. The latter must be heated beforehand and you can pour the canola oil in it until the temperature reaches 180° C. The beaver tails should be fried one at a time for optimal cooking. After frying for a few seconds on each side, you will have a particularly golden result.
Take a paper towel to remove the excess oil and then once all the tails are ready, all you have to do is serve them with the toppings of your choice.
