Snow Crab Spring Rolls Recipe
Ingredients for the sauce:
- 2 tablespoons whole peanuts
- 2 tablespoons of peanut butter
- 1 teaspoon of rice vinegar
- 1 teaspoon of soy sauce
- 1 teaspoon of lemon juice
- 1 teaspoon of sesame oil
- 1 teaspoon of honey
Preparation
In a bowl, mix the peanut butter with the vinegar and lemon juice. Then add honey, soy sauce and sesame oil. Crush the peanuts and pour into the mixture. Keep cool.
Ingredients for 12 spring rolls:
- 300 g snow crab meat
- 12 large rice sheets
- 200 g rice noodles
- 100g red cabbage
- 2 large carrots
- Lettuce leaves
- Chive
- Coriander
Preparation
Cook the rice noodles in salted water for ten minutes. Then let them cool completely. Squeeze the crab meat to extract as much moisture as possible. Season with salt and pepper, then set aside to cool. If you can get whole crab legs, the visual result will be much more beautiful and the taste finer. Steam them and let cool before removing the meat from the shell.
Rinse and drain the lettuce leaves. Pass the cleaned and peeled carrots through a mandolin to make long filaments. Slice the red cabbage. Wash and prepare the chives which you will leave in sprigs.
Assembling the spring rolls
Preparation
Prepare your work surface by lining up your containers with the crab meat, vegetables and sprigs of fresh herbs. Put cold water in the bottom of a large rimmed tray or large plate that can hold a rice paper. Place a wooden tray or a clean, damp cloth next to it. First dip a rice paper in the water and lay it flat on the board or cloth.
Place a little crab meat, arranging it in a line on the rice paper. Add rice noodles, carrot, cabbage, herbs and a salad leaf on top. Fold the rice paper as if you were closing a spring roll or a taco. The roll must be well closed, but do not pull too much on the rice paper which may tear. Repeat as long as you have ingredients left. Serve the spring rolls as soon as they are ready, without forgetting the sauce! You can also arrange the different ingredients on the table so that everyone can prepare their own spring roll.
