“Mac and Cheese” is an English expression imported from the USA and Canada. Kraft macaroni is the base of this dish. He East very appreciated by young Quebec students who defined as an economical, substantial and easy-to-cook meal. The macaroni arrived in Quebec thanks to a 17-year-old Italian named “Carlo Onorato”. He offered the first vermicelli and macaroni to Montrealers.
In 1864, the macaroni and cheese dish was one of the most popular meals in Quebec. Today, mac and cheese remains an economical dish that is cooked at least once every two weeks in Canada.
Ingredients :
- 500 g of macaroni
- 500 ml of milk
- 454 g canned or fresh snow crab meat
- Two cups of cheese of your choice
- 75 ml of butter
- 125 ml of white wine
- Cubic pieces of bread
- 65 g green onions, chopped
- 30 ml melted butter
- Smoked paprika
- Salt and pepper
Preparation
Boil a pot of salted water and add the macaroni to cook according to the instructions on the box.
Melt the butter in a saucepan (over medium heat). Once it foams, you can stir it to form a roux. Leave to cook for a minute. Whisk the wine and pour it in gradually. Do the same with the milk. Stir everything while cooking to prevent the béchamel from sticking to the bottom of the pan.
When the sauce takes on a thick texture, you can add the cheese. Stir again until all the cheese melts. If the consistency is too greasy, add a little more milk. Salt and pepper according to your preferences.
Add the crab meat and macaroni. Correct your seasoning. Pour this mixture into a baking dish. Sprinkle everything with melted cheese and place the bread cubes that you have soaked in melted butter. Don't forget to sprinkle your macaroni with smoked paprika, keeping your hand light.
Bake your mac and cheese at 180°C for a quarter of an hour. Remove the dish when the cheese melts. Finish cooking on the grill for a few more minutes. Sprinkle with green onions before serving. You can accompany your mac and cheese with a green salad to bring a touch of freshness to the whole meal.
