Rutabaga cream and maple pear
INGREDIENTS :
SAUCE
- 500 ml pears, peeled and sliced
- 1 liter of rutabaga, peeled and cubed
- 2 onions, thinly sliced
- 45 ml duck fat
- 2 liters of chicken broth
- 2 potatoes, peeled and cubed
- 2 carrots, peeled and diced
- 45 ml maple syrup
- 60 ml of cream
- Salt and pepper
PREPERATION :
- In a saucepan, brown the carrots, rutabaga, pears and onions in the duck fat for about 5 minutes without coloring
- Add the broth, potatoes and maple syrup. Bring to a boil. Cover and simmer for about 25 minutes or until the vegetables are tender.
- In a blender, reduce the soup to a smooth puree.
- Add the cream, salt and pepper
- Serve hot
