Ingredients
● A butternut squash
● Rice for risotto (300 g)
● Maple syrup (3 tablespoons)
● Butter (100g)
● Pecan nuts (70 g)
● 5 spice mix (1 teaspoon)
● Chicken broth (one liter)
● From a glass of White wine
● ofolive oil (4 tablespoons)
● Of 3 shallots, chopped
● Grated Parmesan (6 tbsp)

Preparation
You can roast the butternut pieces in maple syrup for a quarter of an hour. Save a small quarter for the risotto. Place the rest in the blender to make a puree. Season the dish and keep it warm. Roast the pecan nuts with the salt and 50 g of butter. Add the 5 spice mix. Pour the broth into the saucepan to bring it to a boil. Sauté the shallots in the previously heated oil. Let them cook until they become transparent. Add your rice and cook for 3 minutes.
Moisten your rice with the white wine while stirring. The rice will be cooked when you have used all the broth. As long as it is still biting, you can pour in the mascarpone, the pumpkin purée and the parmesan. Dice the rest of the butter before adding it to the rice.
