For the preparation of oatmeal raisin cookies
First of all, you must place a rack in the center of the oven and preheat it to 175°C. Don't forget to line 2 cookie sheets with parchment paper.
Next, soak the raisins in 250ml of hot water using a small bowl. Raisins should be soaked until swollen. This operation can last around 10 minutes, and you must not forget to drain the grapes well.
In a medium-sized bowl, mix the oatmeal with flour, baking soda and salt. Then, using an electric mixer and a large bowl, beat the butter with the brown sugar until light and creamy. Don't forget to add the egg and vanilla while beating. Use a wooden spoon and stir in the oatmeal mixture, add the swollen raisins and stir.
Then take the plates and place 2 tablespoons of dough per cookie, spacing them 8 cm apart. To have uniform biscuits, do not hesitate to flatten the dough slightly with your fingers.
Place everything in the oven and bake for 10 to 12 minutes, until the edges of the cookies are golden brown, but the centers are still soft. Once baking is complete, simply transfer the cookies to a rack and let them cool completely.
Oatmeal raisin cookies can be kept for about a week at room temperature in an airtight container. To ensure good conservation of the biscuits, you must remember to separate the layers of biscuits with parchment paper.
