Ingredients
- 1/2 kg of wild Canadian blueberries
- 100 g sliced pastrami
- 150 ml of dry red wine
- Four rye loaves
- Four teaspoons of mustard
- Two tomatoes
- ½ bunch of rocket
- Three tablespoons of honey
- A tablespoon of balsamic vinegar
- ½ teaspoon cumin
- A teaspoon of mustard seeds
- Three teaspoons of sunflower oil
- A piece of ginger
- A red pepper
- Two onions
Preparation
Peel your onions before dicing them. Also cut the chilli pepper lengthwise and remove the seeds. Cut it into rounds. Peel the ginger before slicing it. Brown the ginger, onions and chilli pepper in rounds in oil. Add your cumin, mustard seeds and blueberries. Let it cook for two minutes at a low boil. Deglaze everything with vinegar and red wine. Add the honey, then let it thicken for ten minutes. Let this relish cool. Peel and wash the rocket before draining it. Wash the tomatoes to cut them into rounds. Cut the bread in half lengthwise. Brown the halves of bread on the crumb side in a frying pan. Be careful not to add any fat. Spread the bottom halves of the bread with mustard (a teaspoon) and add the rocket. Place your tomato rounds on top and cover with a generous slice of pastrami. Spread the relish on the pastrami and cover with the other half of the bread.
