Recipe for cereal bars with cranberries and speculoos
Ingredients
- 100g puffed rice
- 150 gr of speculoos paste
- 100g of dried cranberries
- 250g dark chocolate
- A handful of nuts (pistachios, hazelnuts, almonds)
- A teaspoon of butter
Recipe steps
Roughly chop your nuts and reserve them. Cut two sheets of parchment paper the size of your dish or the tray that you will use for your cereal bars. Lightly grease them. Place one on the bottom of the dish or plate.
Heat the speculoos paste over low heat in a saucepan. Then pour in the dried cranberries and the puffed rice. Spread this mixture evenly on the sheet of parchment paper in the plate or dish. Then sprinkle with your chopped nuts.
Place the dark chocolate and the butter in a bowl, melt everything in a bain-marie. Pour cereals with nuts and speculoos paste onto your plate. Immediately place the other sheet of parchment paper on top and add weight on top to make the bars more compact. Let cool at room temperature for a few hours.
Then remove the weight and the sheet of parchment paper. While the mixture is not yet brittle, cut it into several rectangles of the same size with a large knife. Then place the plate or dish in the fridge. Once the bars are set, wrap them individually. Store them away from heat and humidity, ideally in a closed box.
