History

Preparation
Disassemble the romanesco cabbage into small bouquets and wash them. Cook your cabbage in the steamer for around twenty minutes. Cut the seeds using an apple corer to give them the appearance of miniature mushrooms. This step is optional, but you will definitely like the result on the plate. Cook your potatoes in boiling salted water for a quarter of an hour.
For the sauce, start by melting a knob of butter in a pan and browning the shallot (cut into brunoise) as well as the carrot. Sprinkle with the game stock and let reduce for around ten minutes, reducing the heat to medium. Filter and keep only the liquid. Season with pepper and salt. Melt the butter in a pan before cooking the bison steaks. Flavor with the trapper's mixture.
Once the steaks are cooked, remove them from the pan. Brown the baby potatoes and Romanesco cabbage for a few seconds in the cooking juices. Use the bourbon to deglaze the pan and add that juice to your sauce. Finish the sauce with maple syrup and don't forget to thicken it by adding cornstarch. Arrange and serve.
