Ingredients
For 4 bowls of soup, you will need:
- 4 whiting fillets
- 125g smoked bacon
- 100g long grain rice
- 10 cl of white wine
- 5 cl heavy cream
- 2 onions
- 1 leek
- 2 teaspoons of paprika
- 2 tablespoons of fish stock
- 1 tablespoon oil
- basil, salt and pepper
Preparation
- Bring salted water to a simmer and pour the rice into it to cook for ten minutes before draining it.
- Clean the leek to cut it into rings.
- Chop your freshly peeled onions.
- Heat 70 cl of water in a saucepan. Add the fish stock and white wine.
- Poach the whiting fillets in a slotted spoon.
- Cut the smoked breast into small dice. You can then brown them in a pan for three minutes. Once they take on a golden color, reserve them.
- Add the rice to the broth before incorporating the cream and the diced smoked bacon.
- Adjust the seasoning according to your preferences.
