Small salted lentils with maple mustard
Petit salé lentils is a typical French dish that combines several pork meats with lentils. Its sauce is spiced up here with old-fashioned maple mustard to break up the fatty side of the meat. Between Dijon salty meat and baked beans with maple syrup from Canada, this is a gourmet and friendly dish that you can share with family and friends.
The origin of this recipe: maple baked beans
Canadian baked beans are a recipe combining bacon, white beans, onion, garlic, mustard and maple syrup. This preparation, which dates back to the days of the sugar shacks, is itself inspired by a recipe similar to lentil sausage, minus the maple syrup. Originally, a drizzle of maple syrup was added to the dish of baked beans in winter. The contributions of legumes, meat and fat then made it possible to better withstand the rigorous conditions of the season.
With the salted meat with maple mustard, we merge the cuisines of France and Canada, for a happy and full of taste marriage.
Ingredients for 6 people
- 2 boxes of lentils
- 1 kg salted pork
- 4 frankfurters or Montbéliard sausages
- A few thick slices of smoked bacon
- 2 carrots
- 2 yellow onions
- A few cloves
- 1 bouquet garni
- Pepper and salt
Preparation of the recipe for lentils with maple mustard
- This recipe requires 30 minutes of preparation and 2h45 of cooking.
- Put the salt pork in cold water for 2 hours to desalinate it. The water will pick up salt and will need to be changed from time to time. Then take the meat out of the water and place it in a pot of cold water. Add a few peppercorns and cook over low to medium heat for 1½ to 2 hours.
- Peel the vegetables and plant the onions with cloves. Brown the slices of smoked bacon in a pot and remove the excess fat. Add onions, carrots and bouquet garni and cover with water. Cook over low heat until the carrots are half cooked and there is almost no water left.
- Once the meat is cooked, take it out of the water and cut it into pieces. Pierce the sausages with a fork. Add meat and sausages to the other pot, with two glasses of water. Let simmer for ten minutes and pour the canned lentils with their juice. Let it cook for another ten minutes.
- Then add a tablespoon of maple old-fashioned mustard or of smoked maple mustard and mix well before serving. You can also use our maple mustard and cider or the maple butter mustard.
- Although it is possible to use normal mustard and dark maple syrup, it is preferable to opt for a maple mustard. Maple syrup is indeed quite sweet. If you put a little too much, you risk ending up with a little salty whose taste may displease you. So avoid, unless you like sweet and savory dishes.
