Maple syrup tiramisu
INGREDIENTS :
1/2 cup hot espresso
1 1/2 cup maple syrup
1/2 cup liqueur (such as Triple Sec or Amaretto)
1/2 cup of raisins
1/2 cup dried cranberries
6 eggs, separated
2 475 g (17 oz) containers mascarpone, at room temperature 1/2 tsp vanilla extract
12 lady finger biscuits, broken in half
1/2 cup walnuts, toasted, chopped (optional)
1/4 cup cocoa powder
1/4 cup maple sugar (or maple ocons)
PREPARATION :
- In a bowl, mix the espresso and 125 ml (1/2 cup) of maple syrup before adding the alcohol and dried fruits. Set aside.
- In a large bowl, beat the egg whites until stiff peaks form.
- In another large bowl, beat the mascarpone, egg yolks, vanilla and remaining maple syrup, then, using a spatula, gently fold into the egg whites.
- In a glass dish of about 3 L (12 cups), place 6 cookies, then evenly pour half of the coffee-dried fruit mixture.
- Sprinkle with half of the nuts and spread with half of the mascarpone mixture. Repeat to make a 2nd layer.
- Refrigerate for at least 6 hours before sprinkling the tiramisu with cocoa and maple sugar.
