- To prepare the shortcrust pastry:
· 250 g flour;
· An egg yolk;
· 125 g of cold, unsalted butter;
· 40 g icing sugar;

· 150 g of brown sugar;
· 3 eggs.
Preparation
In the food processor, mix the icing sugar, flour and butter cut into pieces. The dough will take on a sandy texture. Add the egg yolk before stirring. Gradually pour in the milk and form a ball of dough that you will wrap in cling film. Leave it to rest in the refrigerator for half an hour. Spread the shortcrust pastry in the tartlet molds and prick the bottom of the tart with a fork. Leave to cool.
Preheat your oven to 180°C. Chop your pecans and melt the butter before adding the omelette eggs and maple syrup. Add your chopped pecans. Pour this mixture over the tartlets and place the whole pecans on the surface. Bake for half an hour and let cool before unmolding.
