Maple and cheese soufflé
INGREDIENTS :
- 8 eggs, whites and yolks separated
- 125 ml milk
- 125 ml of Maple syrup
- 30 ml fresh chives, finely chopped
- 3 tablespoons of flour
- 1 pinch of nutmeg
- 1/2 teaspoon of salt
- 1 pinch of pepper
- 250 ml of cheese of your choice (faisselle, etc ...)
PREPERATION :
- Preheat the oven to 200 °
- In a large bowl, using a whisk, combine the egg yolks, milk, syrup, chives, flour, nutmeg, salt and pepper. Stir in the cheese. To book.
- In another bowl, using an electric mixer, beat the stiff peaks until stiff peaks form. Using the whisk, gently fold a third of the egg whites into the reserved egg yolk mixture. Incorporate the rest of the egg whites in the same way. Pour the preparation into 8 buttered and floured ramekins with a capacity of 250 ml each or a large Pyrex dish.
- Bake for 20 to 25 minutes or until soufflés are puffed, golden brown and firm under light pressure with your finger.
- Serve immediately
