- 30 ml vegetable oil
- 1 tomato, diced
- 1 chopped onion
- ½ fennel, thinly sliced
- 3 cloves of garlic
- 4 cups chicken broth
- 30 ml cornstarch
- 15 ml fish sauce
- 15 ml cold water
For the poutine, plan on:
- 750 g of cooked and crispy fries
- 200 g cheese curds
- 1 green onion, chopped
The stages of preparation
- Over medium heat, brown the onion, garlic and fennel in an oiled saucepan.
- Deglaze the sauce with the white wine and let reduce.
- Pour in the broth and simmer over medium heat for half an hour, using a bowl to dissolve the starch and fish sauce in the water.
- Place a sieve over another saucepan and strain the broth, pressing with a ladle to extract all the flavors.
- Add the first mixture with the starch and stir constantly using a whisk. Let it rest for two minutes.
- Adjust seasoning to your preference.
- Add the lobster pieces and continue to mix.
- Divide your fries into a bowl before topping with cheese and sauce.
