Maple ham recipe
History
We know that in Canada, the maple is a tree which produces a very popular liqueur called " Maple syrup ". We were able to discover the latter thanks to a squirrel running along a maple branch. The latter cracked, releasing a delicious sap that the Native Americans had the idea of tasting. But, let's talk about maple ham. This Canadian culinary preparation is traditionally eaten at Easter. In Canada, we prefer to celebrate this holiday with a delicious ham and not with lamb. In the past, farmers fattened pigs during the summer before slaughtering them in the fall. The goal was to enjoy succulent pieces of quality meat and hams.
Ingredients
- 1.5 to 2 kg of cooked ham (you can slice them to reduce the quantities).
- 125 ml of maple syrup
- 10 ml dry mustard
- 15 ml of lemon juice
Preparation
Heat your oven to 160°C and place the ham in a shallow dish with the fatty part on top. Take care to cover the dish with aluminum foil beforehand. Grid the ham and remove excess fat if there is any. Then prepare a mixture by adding the lemon juice to the maple syrup. Also add the mustard. Brush your ham using this preparation. Wrap with aluminum foil and place the ham in the oven to cook for two hours. Cooking takes approximately 30 minutes for 500 g of raw or semi-cooked ham. It is 15 minutes per 500 g for a cooked ham.
Buy the best cooked ham
You have three types of cooked ham to choose from on the market. “Superior” cooked ham contains no gelling agent and almost no polyphosphate. There are no more than 1 % sugar. It represents approximately 80 % of world production. For its part, “choice” cooked ham does not contain any gelling agent, but traces of preservative can be detected. For its part, “standard” cooked ham is likely to contain additives, including stabilizers and flavor enhancers. To cook your Canadian recipe, opt for excellent quality superior ham.
How to choose your maple syrup?
You won't find just one type of maple syrup on the market. As with wine, there are a multitude of syrups with different qualities. A syrup that has a light color is always of better quality. It is fragrant, sweet and tenderly caramelized. The most succulent variants let in more light. On the other hand, dark maple syrups don't taste bad. They are just a little more bitter and full-bodied. Maple syrup is incorporated into various sweet recipes and a large number of Quebec pastries. However, it also goes well with savory preparations, including this famous maple ham. You can also use it to season vegetables or filet mignon. This condiment is used to glaze fish, and even foie gras. If you are looking for the best maple syrups, go to the site “ Maple Treasures ".
