Broth recipe
Ingredients :
- 1 whole chicken cut into pieces
- 1 large onion
- 3 large potatoes
- 3 large carrots
- 2 stalks of celery
- 1.5 L of water
- 40g butter
A few sprigs of garden or summer savory (or 2 teaspoons in its dry version)
Preparation
Clean all the vegetables well. Peel the carrots, onion and potatoes. Cut them into large pieces with the celery. Brown the chicken pieces in butter in a large pot. Remove them once golden brown. Then brown the vegetables in the butter. Remove them as well to return the chicken to the bottom of the pot. Put all the vegetables on top, except the potatoes. Add the water, salt and pepper seasoning as well as the garden savory and cook over low heat. Once the chicken is tender, then add the potatoes and cook for another twenty minutes.
Dough balls recipe
Ingredients :
- 125 g of flour
- ½ teaspoon baking powder
- 120 ml of cold water
Preparation
Separate the vegetables and chicken from the broth. To make the dumplings, mix the flour, yeast and salt in a bowl. Then add cold water gradually. After letting it rest for a few minutes, pour it by spoonfuls into the broth from the fricot simmering on the fire. Cover to let the dough balls cook for about 15 minutes. When ready to serve, place the chicken and vegetables in a bowl. Add one or two balls of dough, some broth and sprinkle with chopped fresh parsley.
Things to know about fricot
The longer the meat cooks, the tastier the broth will be. It might be worth letting the chicken cook slowly in a slow cooker if you have one! If you have a roast chicken carcass left, you can very well use it to make the broth. Instead of the whole chicken, you can just as easily use thighs or breasts. We can then take advantage of this to remove the flesh from the bones at the end of cooking. Shredded chicken meat is delicious in the fry. If you don't like chicken, you can also make a fricot made from beef, pork, rabbit and even seafood or fish. Do you like land-sea mixtures? Cook a few handfuls of fresh clams in your chicken fry.
