Recipe for fricassee of sweetbreads with fire cider cream

It is a recipe that is notably part of the food products classified as offal or tripe. Sweetbreads are part of red offal, from the same family as brains, hearts, livers and kidneys. It is a gland called the thymus, located at the entrance to the trachea, the calf's artery.

Ingredients :
- 45g butter
- 600 g of sweetbreads
- 2 shallots, sliced
- 60 ml of fire cider
- 180 ml of cream 35%
- 30 ml Dijon mustard
- Salt
- Pepper
Preparation :
Take a saucepan to foam the butter. Roast the sweetbreads over low heat, without forgetting to turn them, to get a nice color. When it's done, you can leave them aside. Then add shallot and then you have to come back to brown it. Take some cider then some cream to deglaze it. You can season to your taste, adding mustard. Then sieve to remove the shallot, return to the pan then add the sweetbreads. Heat gently over low heat for 3 minutes. All this will be done by brushing the palms with the sauce, using a brush. You can serve the recipe with seasonal vegetables.
