Delicious recipe for roast pork with cranberry syrup
Ingredients
- 1 kg roast pork
- 150g of dried cranberries
- 50g butter
- 25g of sugar
- 2 small onions
- 2 large cloves of garlic
- A sprig of fresh thyme
- Pepper and salt seasoning
Recipe steps
The day before, soak your cranberries in a little water.
The next day, start by cooking the roast. Preheat your oven to 180°C.
Peel your garlic cloves and crush them with the flat side of a large knife or with the palm of your hand. Heat a little oil in an ovenproof pan. Color your roast on all sides. Add the sprig of thyme, the crushed garlic cloves and ⅔ of the butter. Baste the roast with butter for a few minutes, taking care to turn it from time to time. Salt and pepper your roast and bake for 45 minutes.
While the roast is cooking, prepare the cranberry syrup. Gently heat your cranberries full of water and the sugar in a saucepan. Mix regularly, crushing the cranberries with your spatula. When the volume has reduced by about half and the liquid has taken on a syrupy consistency, remove the pan from the heat. Pass your mixture through a sieve and crush the cranberries to recover as much syrup as possible. Keep a small amount of well crushed cranberries in the sauce.
Peel your small onions and slice them. Melt the butter in another saucepan and add the onions. Once they are translucent, pour your cranberry syrup over them.
Cover and simmer for ten minutes.
Remove the roast from the oven once it is cooked and cover the dish with aluminum foil until ready to serve.
