The necessary ingredients
For the blueberry pancake, you need:
- 200 g of flour;
- 2 eggs ;
- 100 g of cornstarch;
- 15 cl of milk;
- 200 g caster sugar;
- 2 tbsp. tablespoon of peanut oil;
- 2 tbsp. teaspoon of baking powder;
- 2 pinches of salt;
- 2 sachets of vanilla sugar;
- 300 g of blueberries.
- For the maple whipped cream, you need:
- 500 ml whipping cream 35 %;
- 250 ml of maple syrup.
The preparation
This recipe is intended for 4 people and preparation takes approximately 25 minutes.
To start, get a bowl and mix the flour, yeast and cornstarch in it. Beat the eggs, then add the milk and oil. Then incorporate the mixture with the flour and mix with the mixer. The dough should be quite firm, but a little runny. If necessary, you can add a little more milk. Let the mixture sit for about an hour. Wash the blueberries and add them to the batter just before preparing the pancakes.
To prepare the maple whipped cream, take a mixer and whip the cream until it is almost whipped. Then add the maple syrup and whisk the mixture until stiff peaks form.
Heat some oil in a pan. When it is hot, take a tablespoon and pour the batter, forming pancakes ten centimeters in diameter and one centimeter thick. Leave to brown for two minutes on each side and place them on absorbent paper. Finish the preparation by sprinkling the vanilla sugar on the pancake and adding a few blueberries.
