Crème brûlée with foie gras and maple syrup
INGREDIENTS :
- 1 block of foie gras of 90 g
- 4 egg yolks
- 325 ml cream
- a pinch of salt
- 40 ml of maple flakes
PREPERATION :
- Preheat the oven to 150 °
- Pour the egg yolks, the block of foie gras and the salt into a food processor
- Gradually reduce
- Still in the food processor, incorporate the cream halfway
- Stop the robot, and scratch the walls
- Restart the robot and add the rest of the cream
- As soon as the appliance is smooth, pour into 8 small ramekins or 6 large
- Bake in a bain-marie in the oven for about 90 minutes
- Sprinkle maple flakes on each ramekin when cool and finish under the grill for 1 to 2 minutes
The advantage of crème brûlée is that you can prepare the lava recipe. When ready to serve, all you have to do is caramelize with a blowtorch. This fine cuisine starter will impress your guests during your next meal!
You can serve it with our cider jelly.
