History of cheese soup
In Canada, like everywhere else, we love soup because it keeps us warm in winter. It is very rich in nutrients. This is explained by the vegetables and pieces of meat that garnish it. Tasty, cheese soup nourished peasant families after a long day of work. To this day, it is still consumed the day after the festivities. The cooks prepare it with two types of cheese including Cantal and Laguiole. We don't really know which one to choose. Others end up opting for grated gruyere mixed with cantal or laguiole.
Ingredients for the soup:
- 750 ml chicken broth
- 4 apples cut diced
- 250 ml finely chopped celery
- 125 ml chopped onion
- 1 white leek in slices
- Pepper and salt
- Two cups diced cooked ham
Ingredients for the cheese sauce:
- ½ cup unsalted butter
- ½ cup all-purpose flour
- A liter of milk
- 450 g of cheese sharp cheddar (grated)
Preparation
You can start with the soup. Melt the butter in a cauldron, taking care to set the heat to medium temperature. Then add the flour. Whisk to integrate everything well. To obtain a homogeneous mixture, add the milk (1/4 of each addition). Pour in your cheese then let it melt, stirring regularly. You can pour this mixture into the soup before incorporating the ham. Heat everything and serve with croutons.
