Canadian Potato Salad Recipe
Ingredients for the salad:
- 750g potatoes
- 4 eggs
- 1 large clove of garlic
- A few mint leaves
- Salt
Preparation
Peel the potatoes and cut them into pieces. Place in a pot with the peeled garlic clove and the mint. Add cold water. The potatoes should be completely submerged. Add salt and cook for ten minutes. Prick the potato pieces. They should be just cooked. Take them out of the water and set aside to cool.
Then place your eggs in a saucepan of cold water which you will heat. From boiling, allow around ten minutes of cooking. Then immediately take the eggs out and put them in cold water. Peel them and separate the yolks from the whites. Cut the whites into coarse pieces, crumble the yolks and mix with the potatoes.
Ingredients for the sauce:
- 250 ml light cream
- 4 tablespoons of mayonnaise
- 2 tablespoons of capers
- Chives
- A few stalks of celery
- 1 tablespoon of mustard
- Salt and pepper seasoning
Preparation
Clean the chives and celery then chop them. Cut the capers into small pieces or leave them whole, depending on your preference. Mix mayonnaise and mustard. Then add the cream and season. Finish with chives, celery and capers.
When the cooked potatoes and eggs have cooled, mix them with the sauce. Keep refrigerated until ready to serve.
