Canadian Maple Pecan Pie Recipe
Ingredients for the dough:
200 g + 20 g flour
100 g cold semi-salted butter
20 g of sugar

60 g melted butter
60 g brown sugar
15 cl of Maple syrup
2 eggs
150 g pecans
Preparation
For the pie crust, mix the diced butter, flour and sugar in a large bowl. Mix with your fingertips. Then add three tablespoons of water and continue to knead until you obtain a fairly sandy mixture. Be careful not to work the dough too vigorously. Keep it cool for an hour in cling film.
Flour your work surface and roll out your dough using a rolling pin. Wrap the latter around the roll before placing it in a rectangular non-stick mold. Prick the bottom of your dough as well as the edges using a fork. Refrigerate for half an hour to prevent the edges from shrinking.
Preheat the oven to 180°C. Bake the tart and cover with baking paper for thirty minutes. For your topping, beat the butter for four minutes. Add the maple syrup and brown sugar while continuing to whisk. Also add the whole eggs. Remove the cooking balls and the paper.
Spread your pecans on the tart base which is already pre-cooked. Then pour in the mixture and bake for half an hour. You can enjoy your dessert cold or hot with a small cup of custard.
