Blueberry Pancakes
We all know pancakes, this American variant of our Breton pancakes. They are smaller in size, but different in taste and texture. Pancakes - literally pancakes - are fluffy thanks to the addition of yeast. There are several variations of pancakes in the United States and Canada. Ingredients
For the pancake batter (about 15 pancakes):
- 200g flour
- 150 ml milk (or 120 ml milk + natural yoghurt)
- 100g dried blueberries
- 35g caster sugar
- 1 egg
- 10g melted butter
- 2 teaspoons baking powder
- A big pinch of salt
Preparation
- Soak the dried blueberries for 15 minutes in water before preparing the rest of the recipe.
- Beat the egg, add the milk, sugar and melted butter. In a large bowl, mix the dry ingredients (flour, yeast and salt). Pour over the mixture of egg, milk, sugar and melted butter little by little. Whisk constantly with a mixer or manually to avoid the formation of lumps. Drain the blueberries that you previously soaked.
- Heat a large pancake pan and grease it when hot. Make 2 to 3 small piles of dough with a small ladle. Arrange a few blueberries on top of each pile, pressing them lightly into the batter. Cook for 2 to 3 minutes - or until small bubbles form - before flipping. Remove the pancakes when they are golden brown.
- To make these pancakes even more delicious, why not add grated coconut or crushed dried fruit to the batter? You can also use vegetable milk in this recipe: almond milk, coconut milk or soy milk.
