Quebec recipe for blueberry bread pudding
History
To tell the story of pudding in Canada, let's revisit that of pudding chômeur, which is also one of the best Quebec recipes. It was created by workers during the Great Depression when women had very few ingredients to cook with. However, this dessert is one of the fundamentals when we talk about Canadian cuisine. This pudding recipe also contains blueberries, this famous fruit in Canada. A food source for indigenous populations, blueberries were both tasty and inexpensive. Easy to store, blueberries were eaten fresh. They were kept in a dry place to consume them over the winter.
Ingredients :
- Three cups of milk
- Eight cups of loaf of white or wheat bread
- Half a cup of sugar
- Two cups of frozen or fresh blueberries
- A quarter cup of softened, unsalted butter
- 15 ml of vanilla extract
- 4 eggs
- 2.5 ml ground nutmeg Maple sauce
- A cup of maple syrup
- A cup of water
- Half a cup of sugar
- Three tablespoons of softened, unsalted butter
- Three tablespoons of all-purpose flour
Preparation
Place the rack in the middle of the oven before heating it to 180°C. Mix the vanilla, milk and nutmeg in a large bowl. Add the stale bread and leave to soak for five minutes. In a bowl, cream the sugar and butter using your electric mixer. Add the eggs and mix everything until you obtain a homogeneous mixture. Incorporate this mixture into the soaked bread and add your blueberries. Pour your pudding into a glass dish. Cook for 1 hour 15 minutes until the pudding swells and turns golden brown.
To prepare the maple sauce, bring the sugar, water and maple syrup to a boil in a saucepan. Let everything simmer for five minutes. In a bowl, mix the flour and butter using a fork. Add the butter little by little until the sauce thickens. Serve your pudding warm and accompany it with its warm maple sauce. We love maple syrup for its caramel aromas and tender flavors. It enhances the taste of the dishes in which it is incorporated. Blueberries are a tasty fruit with many benefits. Combine these two ingredients in a dish and fall in love with Quebec cuisine.
On Les Trésors d’Érable, you will find dried wild blueberries or presented in the form of fruit paste. You can also buy an excellent bottle of maple syrup. Get to your stove to prepare the best blueberry bread pudding.
