Blueberries pie
This small berry from the same family as our blueberries is very rich in antioxidants, especially if it comes from a wild culture. Dried blueberries can be added to many preparations, such as blueberry pie. The latter is a must-have classic in Canada and the United States. We share with you the recipe for this gourmet pie that will delight young and old.

Count twenty minutes of preparation and twenty minutes of cooking.
For a round blueberry pie 20 cm in diameter (8 servings), you will need:
- 1 circle of shortcrust pastry
- 60g almond or hazelnut powder
- 75g of butter
- 50g of sugar
- 1 egg
- 40g dried blueberries
Preparation
- Preheat the oven to 200°C before rolling out the shortcrust pastry in the circular mould. Pinch the dough at the edges. Prick with a fork. Cut a sheet of parchment paper to the size of your mold and place it on the dough. Place dried beans on top to prevent the dough from swelling during blind baking. Bake for ten minutes. When the edges begin to color slightly, remove the mold from the oven. Remove the dried beans, parchment paper and leave the pie shell to cool.
- Make the filling while you wait. Mix the butter, the sugar, the ground almonds - or hazelnuts - and the egg in a bowl, using an electric or manual whisk. Add the rehydrated blueberries. Then pour this mixture over the warm pie shell and bake for about thirty minutes. When the pie is golden, you can remove it from the oven.
- Remember to consume the pie quickly, because it does not keep for long. In the refrigerator, it will keep for up to 2 days. It's best to transfer your pie to an airtight container. If this is not possible, take care to cover the mold with plastic wrap before refrigerating.
Our tips for making this pie a success
This pie is best with fresh blueberries, but unless you can be in Canada during the season, you can settle for dried blueberries. On the other hand, care should be taken to soak them in lukewarm water for about twenty minutes to rehydrate them.
If you have trouble unmolding pies and quiches from your usual pie dish, consider using a pie pan with a removable bottom, or a silicone mold. You can also cut parchment paper to line the bottom and sides of the pan, before placing your shortcrust pastry on it.
If you want to change the original recipe a bit, why not add other berries to the recipe? For example, you can add fresh blueberries, but also raspberries, pitted cherries, currants and blackcurrants.
Are your fruits already very sweet? Use less sugar in the filling and you can also serve it with a small scoop of ice cream. The latter will come to break the little acidity of the blueberry for a dessert or a snack with a balanced taste.
