Ingredients
- Shortbread or shortcrust pastry
- 33 cl of milk
- Three tablespoons of cornstarch or cornstarch
- Four tablespoons of strong cocoa
- An egg yolk
- Two tablespoons of butter
- 60 g of sugar
- A pinch of salt
- A teaspoon of natural vanilla
For the marshmallow meringue
- An egg white
- 50 g of powdered sugar
- One and a half tablespoons of water
- A pinch of salt
- Six marshmallow cubes
Preparation
Whisk the egg and sugar and add the starch little by little while continuing to beat. Also add the vanilla, milk, salt and cocoa. Cook the mixture in a skillet or saucepan. Mix until everything thickens. Let cool.
Roll out and press the dough into a pie mold. Cook your dough blind topped with granules. Once the edges turn golden brown, cook for another ten minutes. Remove from the oven and let cool. Set aside.
Whisk the sugar and egg white in a bain-marie. Add one and a half tablespoons of water. Finish with a pinch of salt. Whisk until you obtain a firm Italian meringue. Add six chopped marshmallows. Then pour the chocolate cream over the dough and garnish with the marshmallow meringue. Serve very chilled.
