Preparation
Start by preheating your oven to 180°C (at thermostat 6). Cut the back of the lobster lengthwise using a sharp knife. Place pieces on each half. Season with salt and pepper. Bake everything for around twelve minutes and place under a rack for four minutes before serving.
Differentiate Canadian lobster from European lobster
The European lobster, Breton lobster or blue lobster lives on the Atlantic coast of the continent, from the Arctic Circle to the Moroccan coast. It is easily recognized by its dark blue shell. The latter is punctuated with black or white spots. This crustacean also stands out for its large claws. Its shell has fewer spines than that of the lobster. Its flesh goes very well with butter and different sauces.
The Canadian lobster for its part (or American lobster) lives on the northeast American coast. It has a dark green or orange shell with dark spots. Its belly also has an orange color. It also has imposing claws. Its flesh is much sweeter and firmer than that of the European lobster. It is ideal for long cooking periods.
What to serve with grilled Canadian lobster?
You can serve your grilled Canadian lobster with garlic scapes butter or lemon juice. Add a small green salad on the side. Some prefer to eat it with a large portion of grilled vegetables (peppers, eggplant, asparagus, etc.) or couscous. It can also be served with stuffed potatoes.
