Atlantic salmon burger recipe
Ingredients :
600g Atlantic salmon fillet
2 eggs
2 tablespoons Dijon mustard
1 tablespoon mayonnaise
1 tablespoon lemon juice
½ teaspoon lemon zest
2 stalks of chives
100 g breadcrumbs (ideally Japanese panko type)
Salt and pepper seasoning
Olive oil
Burger buns
Salad leaves
Tomato slices
This recipe takes about 30 minutes to prep and about 10 minutes to cook per burger.
Preparation :
Chop the chives and set aside. Cut 400 g of salmon into small cubes of less than one cm and place them in a large bowl. Coarsely chop the remaining 200 g before placing them in a blender to chop with the egg yolks, lemon zest and juice, mustard and mayonnaise. Reduce to a paste and transfer it to the bowl containing the small pieces of salmon. Add the chives, 4 tablespoons breadcrumbs and seasoning. Mix everything gently.
Then divide the dough into 6 to make the salmon patties. You can help yourself with an oiled baking paper to flatten them. They should be approximately 2cm thick. Place a film on top and put in the freezer for about thirty minutes to firm them up.
Beat the remaining egg whites and pour them into a deep plate. In another deep plate, put the rest of the breadcrumbs. Heat oil in a skillet. Take out the salmon patties. Pass each of them in the bath of whites, then in the breadcrumbs. Gently press the pancake so that it sticks well. Then put the breaded patties in the hot oil and cook for 3 to 4 minutes on each side, or until browned. Flip and cook again for 3-4 minutes. Then take them out and put them on a plate lined with a paper towel to drain the excess oil.
Heat the previously opened buns. Lay the halves in a large nonstick skillet or place in the oven, depending on your preference. Then add the lettuce, tomato slices and sauce of your choice to each burger before serving.
Tips for this recipe
Among the ready-made sauces, we recommend mayonnaise, tartar sauce or Béarnaise sauce for these salmon burgers.
You can also prepare a lime mayonnaise sauce. Mix mayonnaise with the juice of a lime, chopped fresh basil leaves and a few drops of hot sauce.
Accompany these burgers with fries. For an extra touch of freshness, serve slices of cucumber on which you will have previously passed a turn of the salt mill. To be enjoyed with your fingers!
