Cream of asparagus with maple brie
INGREDIENTS :
30ml (2 tbsp) duck fat
1 diced onion
2 bunches of asparagus, cut into pieces
30 ml (2 tbsp.) Maple syrup
Salt and fresh ground pepper
1 liter (4 cups) chicken broth
125 ml (1⁄2 cup) cream 15 %, cooking
200 g (1 cup) Brie cheese, remove the rind
PREPERATION :
- In a large saucepan, melt the duck fat and sauté the onion.
- Add the asparagus and continue cooking for 2 minutes.
- Add the maple syrup. Salt and pepper. Add broth and simmer 20 minutes, or until asparagus is tender.
- Using a blender, reduce the soup to a smooth puree.
- Return the soup to the pot. Incorporate the cream and the cubes of Brie.
Simmer until the cheese is melted and well incorporated.
