Duck and maple syrup creton
INGREDIENTS :
- 1 duck breast passed through the meat mill (keep its fat)
- 1/2 white onion, chopped
- 1 garlic clove, chopped
- 80 ml (1/3 cup) chicken broth
- 80 ml (1/3 cup) of Maple syrup
- 15 ml (1 tbsp) of Dijon Mustard
- 37 ml (2.5 tbsp) oatmeal
- 1/4 tsp. 1/2 teaspoon ground cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. 1/2 teaspoon ground ginger
- 1/4 tsp. ground nutmeg
- Salt and pepper, to taste
PREPERATION :
- In a saucepan over medium-high heat, combine the chopped duck breast and onion and brown for 1 minute, stirring.
- Add the garlic, then stir for another 1 minute.
- Add all other ingredients and simmer over medium-low heat for 20 minutes, until the broth is completely absorbed.
- Remove from heat and mold into small dishes.
- Cool overnight.
