Tomato and maple gazpacho
INGREDIENTS :
- 800 g of ripe Quebec greenhouse tomatoes
- Juices of 2 lemons
- 60 ml of Maple syrup
- 1 red pepper
- 1 greenhouse cucumber
- 2 medium onions
- a few drops of tabasco
- Celery salt
- Pepper
PREPERATION :
- Peel and seed the tomatoes; mix the pulp
- Add the lemon juice and maple syrup
- Cut the pepper into small cubes
- Peel and seed the cucumber and dice it
- Finely chop the onions
- Mix all the vegetables with the tomato pulp and add the tabasco, and the celery salt to taste as well as the pepper.
Reserve in the refrigerator and serve very chilled
