INGREDIENTS :
- 15 ml duck fat
- 1 onion, finely chopped
- 2 apples, finely diced
- 10 ml finely grated ginger
- 15 ml of apple cider vinegar
- 15 ml of maple syrup
- 10 ml finely chopped fresh chives
- 450 g duck confit, shredded
- salt and pepper
- 1 egg for the gilding
- puff pastry
PREPERATION :
- Sauté onion and apples in duck fat, stirring, for 3 minutes or until softened.
- Add the ginger, apple cider vinegar and syrup and cook until the liquid has almost completely evaporated.
- Add the pulled duck and chives
- Salt, pepper and mix
- Let cool
- On a lightly floured surface, roll out the dough into a 40 x 30 cm rectangle. Press each piece of dough into buttered muffin cups. Distribute the reserved filling in the center of each square of pastry. Bring the tips to the center, over the filling and press them together to seal the puff pastry.
- Whisk the egg with a little water. Brush the puff pastry with the egg mixture. Bake in a preheated oven at 220 * for 20 minutes.
- Let stand 5 minutes before serving
