Leg of lamb with leeks, caramelized with maple
INGREDIENTS :
3 lb (1.4 kg) fresh leg of Quebec lamb 2 cloves of garlic
500 ml (2 cups) lamb stock or poultry broth
Salt and pepper to taste
2 leek whites
80 ml (1/3 cup) butter
2 garlic cloves, chopped
90 ml (6 tbsp.) Maple syrup

PREPERATION :
Heat the oven to 140 ° C / 275 ° F.
Place the first 4 ingredients in a roasting pan, cover and cook for 7 hours in the oven.
Cut the leeks in half. Cook in boiling water for 8 minutes to keep them crunchy.
In a skillet, melt the butter and sauté the garlic and leeks over medium heat for 2 minutes.
Add the maple syrup and cook until the syrup coats the leeks.
