INGREDIENTS :
PANCAKE DOUGH :
3 eggs
375 ml (1 1⁄2 cups) milk
250 g (1 cup) flour
60 ml (4 tbsp.) Duck fat
APPLE CRANBERRY COMPOTE:
1250 g (5 cups) peeled and chopped apples 750 g (3 cups) dried cranberries
250 ml (1 cup) maple syrup

PREPERATION :
Whisk the milk and eggs. Add the flour, whisking until the mixture is smooth. Keep cool.
Place the apple pieces in a large pot. Add the cranberries and maple syrup. Cook over medium heat for about 6 minutes.
Place duck fat in a pan to melt it. Heat over high heat. Pour in a ladle of dough then tilt the pan in all directions so that the dough spreads out and completely covers the bottom.
Cook for a minute or until the bottom of the pancake is golden brown. Clear the sides, turn over and cook for a few more seconds.
Put the pancake on a plate, garnish one half with the compote and fold. Although it is delicious plain, you can add a drizzle of maple syrup.
