Maple syrup tiramisu
INGREDIENTS :
1/2 cup hot espresso
1 1/2 cup of Maple syrup
1/2 cup liqueur (such as Triple Sec or Amaretto)
1/2 cup raisins
1/2 cup of dried cranberries
6 eggs, separated
2 17 oz (475 g) containers mascarpone, at room temperature 1/2 tsp. tea vanilla extract
12 lady's finger cookies, split in half
1/2 cup walnuts, toasted, chopped (optional)
1/4 cup cocoa powder
1/4 cup of maple sugar (or maple ocons)
PREPERATION :
- In a bowl, combine the espresso and 125 ml (1/2 cup) of maple syrup before adding the alcohol and dried fruits. To book.
- In a large bowl, beat the egg whites until stiff peaks form.
- In another large bowl, beat the mascarpone, egg yolks, vanilla and the rest of the maple syrup, then, using a spatula, gently fold into the egg whites.
- In a 3 L (12 cups) glass dish, place 6 cookies, then evenly pour half the coffee and dried fruit mixture.
- Sprinkle with half of the walnuts and spread half of the mascarpone mixture. Repeat to go up a 2nd floor.
- Refrigerate at least 6 hours before sprinkling the tiramisu with cocoa and maple sugar.
