Duck salad, maple vinaigrette
INGREDIENTS :
Duck breast of dried or smoked ducks in slices
Duck gizzards confit, reheated
1 jar of block of foie gras from the Tasty Duck Orchard 1 salad of your choice
Tomatoes (or 8 to 12 cherry tomatoes)
20 nuts
VINAIGRETTE :
1 garlic clove, finely chopped
2.5 ml (1⁄2 tsp.) Dijon mustard
30 ml (2 tbsp.) Maple syrup
30 ml (2 tbsp.) Cider vinegar
15 ml (1 tbsp.) Maple vinegar
90 ml (6 tbsp.) Olive oil
5 ml (1 teaspoon) fresh chives, finely chopped Salt and pepper
PREPERATION :
- In a bowl, combine all the salad ingredients, season with salt and pepper.
- In another bowl, whisk all the dressing ingredients and add to the salad.
- Serve with salad
