Butternut squash comes from Central America. It is an ancient fruit belonging to the cucurbitaceae group. It belongs more precisely to the “cucurbita moschata” variety. Native Americans were the first to consume it 10,000 years ago.

Ingredients and preparation
To prepare this succulent recipe for roasted squash with maple syrup and camelina seeds, you need:
- Preparation time: 5 minutes;
- Cooking time: 45 minutes;
- Number of servings: 4 to 6.
Ingredients
- A large Butternut squash;
- 30 ml of canola oil;
- 5 ml of ground cumin;
- 5 ml of salt;
- 2.5 ml of ground pepper;
- 30 ml of maple syrup;
- 15 ml of cider vinegar;
- 30 ml of camelina seeds;
- Coriander leaves.
Preparation
Place the rack at the bottom of the oven and preheat the oven to 200° C. Peel your squash before cutting it in half lengthwise. Remove the seeds and cut the vegetable into one centimeter thick sections. Spread the squash pieces on a baking sheet lined with parchment paper.
Spread your vegetable pieces with oil before seasoning them with pepper and cumin. Bake for 35 minutes. Remove your squash and brush it with vinegar and maple syrup. Sprinkle with camelina seeds and put the tray back in the oven for around ten minutes, until your vegetables are golden brown. Garnish with coriander and serve with a meat of your choice.
