Ingredients and preparations
To prepare a succulent salmon tartare with maple sugar, you will need:

½ kg of fresh, skinless salmon;

3 tablespoons of maple sugar;

4 teaspoons chopped French shallots;

3 tablespoons of olive oil;

2 tablespoons chopped parsley;

1 tablespoon of Dijon mustard;

Lemon juice and zest;

Preparation
Prune your salmon diced to place in a bowl. Cover everything with plastic wrap and keep in the refrigerator. In another small bowl, combine the maple sugar, shallots and oil. Leave to macerate for a few minutes. Take the salmon out of the fridge to add the shallots to the marinade. Also add the remaining ingredients. Add pepper and salt to your liking. You can serve with croutons and vegetables or salad.
