Veal in maple syrup
A little history
In Quebec, we consume much more veal than elsewhere in Canada. This piece of meat is an integral part of the history of this region. And that's why it incorporates many other recipes from the region.
The First Nations lived exclusively on small game and of Pisces. Beef made its appearance in the era of New France. The French greatly influenced the food identity of the nations that became then Quebecers. Hence dishes like braised veal shoulder or veal in maple syrup.
But the preparation does not only contain veal. As its name suggests, there is also maple syrup, a true emblem of Canada. There are two stories about maple syrup. First, there is the Micmac legend which evokes a Micmac woman who went to harvest maple sap in the spring. She heated this sap on the fire and fell asleep. When she woke up, she found a sweet, clear syrup in her pot.
The 2e history comes from the Algonquins. One of them pulled his tomahawk out of a maple tree. The sap flowed from the notch. Tasting this liquid, he enjoyed the taste.
Ingredients and preparation
To cook a delicious veal with maple syrup, plan:

Ingredients :
- 400 g of veal (blanquette, neck…)
- An onion
- two carrots
- 10 cl of Maple syrup
- 3 tablespoons fresh cream
- Oil
- Salt and pepper
Preparation :
Prepare your veal by cutting it into cubes. Fry them in oil for ¼ hour to give them a nice golden appearance. Peel and slice the onion and carrots before sautéing them. Reserve your meat.
Once you have finished sautéing your vegetables, you can add the meat and maple syrup. Pour the orange juice before covering everything with water. Season according to your preferences.
Cover your pot and simmer for an hour over low heat.
Peel the apple and remove the seeds. You can add it 10 minutes before the end of cooking. Also add the fresh cream and it's ready.
A tasty and healthy meal
This exquisite recipe turns out to be virtuous at the same time. Indeed, the veal is rich in protein and often low in fat (except the breast and the chop). This meat is also associated with a high potassium content in addition to its iron and zinc intake. The consumption of veal also allows you to benefit from different vitamins (B3, B12, etc.).
