Let’s take a look at mustard production in Canada. The climate of the country is perfectly suited to growing mustard seeds. In 1936, only three hectares were dedicated to mustard planting in Alberta. Currently, there are three varieties of mustard including oriental, brown and yellow. It is combined with other condiments including maple syrup.

Ingredients
- 1.5 kg of pork spare ribs;
- 1/2 cup maple syrup;
- 1/4 cup Dijon mustard;
- 2 tablespoons of cider vinegar;
- 2 cloves of garlic, finely chopped;
- 1 teaspoon of paprika;
- Salt and black pepper, to taste.
How to prepare maple mustard ribs?
Preheat your oven to 180°C. Season the ribs with salt and pepper, then place them in a baking dish. In a bowl, mix the maple syrup, Dijon mustard, cider vinegar, chopped garlic and paprika. Pour the sauce over the ribs, making sure to coat them well on both sides. Cover the baking dish with foil and put it in the preheated oven. Cook the ribs for about 2 hours, basting them with sauce every 30 minutes. After 2 hours, remove the foil and cook for another 30 minutes, brushing the ribs with sauce occasionally, until nicely caramelized. Once cooked, remove the ribs from the oven and let them rest for a few minutes before cutting them into portions.
