The treasure of the French language tells us more about the origin of the word “cake” (term attested in 1795). This classic preparation consists of sugar, flour, butter and eggs. There are sometimes currants or candied fruit.
According to history, this syrup was discovered before Jacques-Cartier decided to colonize America. Native American dogs would have rushed to a broken maple branch to lick the sap. Native Americans in turn tasted it to feast on this succulent nectar. According to other stories, Jacques-Cartier and his companions were the first to discover this syrup between 1536 and 1542. By cutting into a tree that looked like a walnut tree, they saw maple syrup spurting out. When they tasted it, they found it to taste like wine.
Ingredients :
For the cake
- 150g eggs
- 130 g almond paste at 70 %
- 100g of flour
- 50g brown sugar
- 2.5 g fleur de sel
- 3 g baking powder
- 60 g of maple sugar
- 60g maple syrup
- 110g butter
For the maple soaking syrup
- 330g maple syrup
- 170g water
Muscovado icing for the cake
- 50g butter
- 170 g muscovado
- 85 g of UHT 35 liquid cream %
- 85g sugar
Preparation
The muscovado frosting will require a setting time of 24 hours. Also, the day before, bring the cream to a boil and add the butter. Pour the resulting mixture over icing sugar and muscovado sugar. Mix in a robot. Keep refrigerated for 24 hours.
To prepare the cake, mix the eggs and the marzipan in a robot equipped with blades. Continue the assembly by adding the fleur de sel, the brown sugar and the maple sugar. Grease a cake tin and bake the cake at 170°C for 20 minutes.
Once your cake is baked, you can soak it in warm maple syrup. Whip the icing until it turns white. Using a railway socket, you can do your frostings on the cake. Decorate and serve.

Accompany your slice of cake with a delicious typical Canadian spread. In this case, you can opt for a delicious maple orange jam or a good maple wine and sea buckthorn jelly. Regarding the latter, it is a tasty fruit with multiple virtues. It is rich in fiber, beta-carotene and vitamin C. You can also serve it with a good hot chocolate.
